There are four kinds of delicious food in Tangxi Street: Lamian Noodles, wonton, fried dumplings and onion cakes.
1) Tangxi Lamian Noodles (Tangxi Wheat Noodle)
Tangxi Wheat Noodle is also Tangxi Lamian Noodles. Everyone may know about Lanzhou Lamian Noodles, but who doesn't know Tangxi Wheat Noodle in Jinhua City and Jinxi District? That smell is quite good! Don't look at the flour, it's thick and fine, it's very convenient to make, you can fry it or eat it! But the taste is really good! We grew up eating Tangxi wheat flour!
2) Tangxi dumplings
If you are from Tangxi, you are no stranger to the local unique dumplings, and most of you like to eat them. When you go to relatives and friends' homes in Tangxi area (Tangxi \ Yangbu \ Luobu \ Jiangtang) before and after the Spring Festival or during the festive season, the most traditional snack is the dumplings. A white porcelain bowl contains several round dumplings with some tips.
If the host is hospitable, he often beats two earth eggs into the glutinous rice balls bowl, and this bowl of dim sum will be more refined.
Some netizens here have praised its delicacy and looked for shops to sell it. In fact, authentic farm snacks are delicious only when they are cooked by themselves. Today, when I go back to my hometown to do business, I especially ask my mother for advice. Now the technology and formula are announced, so you gourmets can follow suit.
First, the production of glutinous rice balls powder is delicious.
When the glutinous rice is soaked in clear water, the water level should be more than twice as high as that of the glutinous rice. If there is too little water, the glutinous rice will be fermented. In autumn and winter, the soaking time is generally 2-3 days, and the clear water should be changed every 1 days.
When the time is up, the rice will be soaked. When taking out the glutinous rice, one thing must be paid attention to: be sure to wash it with filter cloth for many times. Not until the rice is stirred in the water.
The white glutinous rice smells a little sour. If it is too sour, it is because it has been soaked for too long or lazy to change the water.
Then it is exposed to the sun for at least 5 days in the winter sun. In short, the more dry it is, the better it is. Finally, it is ground into powder by a machine, and the prepared dumpling powder should be sealed. You can go to the vegetable market to buy raw materials for dumpling stuffing and prepare dumplings to treat yourself.
The most authentic fillings are radish, dried bean curd and lean meat, as well as winter bamboo shoots, snow vegetables and celery, which can be prepared according to your own taste.
Cut all kinds of ingredients into pieces and stir them evenly. Before dumpling stuffing, add a little salad oil and stir-fry until it is 7% cooked, dry it a little, and don't have too much soup. In this way, the soup leaks to the bottom of the bowl, which can ensure the stuffing to be dry.
Take another porcelain bowl, put it into diced lean meat cut into the size of thumb cover, pour in soy sauce and marinate for more than half an hour for later use.
After mixing the flour, the dumplings are officially started, cut into balls the size of 1 yuan coins, and put them all over the palm of the left hand, giving full play to the flexibility of the thumb and forefinger of the right hand, and knead them to form a handless flour bag. You can seal the whole dumpling, leaving a sharp head at the last closing point, which is not only beautiful, but also ensures that the dumpling skin will not be damaged and the stuffing inside will not overflow.
Boil the boiling water, and be careful not to pour too much dumpling, so as not to make it a pot of paste.
The dumpling will sink to the bottom immediately after it is put into the pot, so we often refer to people who can't swim as the dumpling.
Stir it slightly with a spoon. The dumplings will be cooked in about one minute after they float.
Take a big bowl, pour a little soy sauce and monosodium glutamate, pick a little lard with chopsticks, and then you can pick up the dumplings from the pot and put them in a bowl.
Finally, sprinkle some fragrant shallots, bite off your mouth, leave the fragrant skin, fragrant stuffing and fresh meat ... and just gorge yourself!
I should remind you that if it's overcooked, it's not delicious, but if it's too raw, it's life. Soy sauce is better to use soy sauce produced by the old sauce shop in Luobu Old Street, which is more delicious.
3) The production process of Bubu
in Tangxi is complicated, and its raw material is glutinous rice, which should also be soaked in water, steamed in rice cooker for several days, and then cooked. Leave some bad, squeezed maltose water and put it in a big pot to cook it thoroughly. The caramel should be constantly stirred with a spatula to prevent it from sinking to the bottom, and the color will turn yellow when it sinks. Maltose is also the main raw material for making winter rice sugar. After it is boiled, it needs to be practiced. Just like kneading dough, the impurities in maltose are removed to become "white sugar" (not ordinary white sugar), which is cut into small pieces and stuffed. The stuffing is made by grinding fried sesame seeds and then adding appropriate amount of sugar, so that the stuffing is very clear. In some places, fried rice is directly ground to replace sesame seeds. Make dumplings and press them into a round, thin piece. Of course, the pudding is usually made when the temperature is below 15 degrees. Because it melts at high temperature and sticks to each other, it won't happen when the temperature is low, and a big piece may jump off when you take a bite, so when you eat it in winter, preheat it with your hands first, and hold it under it with one hand to avoid falling off. When you eat, you can also take a bite and let it melt slowly, which has a special flavor.
4) Tangxi Snack
This is an ancient snack in Tangxi. I remember that when I was a child, the living conditions in the countryside were poor. When there were snacks sold in the village, many people would be surrounded there. The price was cheap, and many children had no money, so they secretly traded their rice for them. There were various condiments for selling them. It's also very hard work to beat the glutinous rice. Soak the glutinous rice, then steam it, and then slowly mash it in a large stone mortar. The rice grains are mixed together, just like dough. After mashing, they are made into pieces the size of plates and glued with cooked rice noodles, so that many lei will not stick together. When you buy it, you will cut it into pieces with scissors.
5) Gluten gizzard
Gluten gizzard and its raw materials are the same as those in Lamian Noodles. It is made of flour, so gluten should be prepared first. Production of gluten. Add a proper amount of water to flour to form dough, and then wash the dough repeatedly with clear water. You will find that the dough is getting smaller and smaller, but it will not disappear completely. The rest is gluten, which is only about one-third the size of the original dough, and it is full of holes. To be continued: Qingming Festival. Qingming is a festival that everyone in Tangxi pays more attention to. Because Tangxi people not only like to eat, but also like to make all kinds of snacks. Therefore, most people in Tangxi, which is associated with eating, will not miss it. Pick a lot of Qingming grass back (maybe it's the rat's grass sung in Feng Zhi's poems, with a layer of pale white fluff and yellow beaded flowers), cook it, chop it up, mix it with rice flour, wrap it into salty (jiaozi-shaped or duck-egg-shaped), wrap it into sweet (pressed into various flower cases with a wooden mold), and steam it out in a cage, and the whole street is full of the smell of green spring. There is a poem entitled "Qingming Festival", which goes like this: knead a handful of rat-weed/rice flour to evaporate the fragrance of Qingming Festival/white fog rises from the hill/I wash clothes by the pond/shallow grass moistens the shoes of blue cloth//I stuff a handful of fine firewood/blue smoke is choking from the stove/it is raining outside/I come back with hemp fiber/I insert a bright day lily obliquely in the bamboo basket. This is also the Qingming I love!
Dragon Boat Festival: It seems that there is no dragon boat race, at least I have never seen it. Eat zongzi.
July and a half. Halloween is also eating. Steamed rice cake, which has more than ten layers, tastes better, is very thin and does not make a living. There are also sweet and salty points, prismatic, and can't be seen outside.
Mid-Autumn Festival: it is moon cake.
Assemblies: There will be three assemblies in Tangxi on April 16th, Mid-Autumn Festival and Winter Solstice. In the past, when there were few things exchanged, gathering was indispensable. The gathering of various commodities was crowded with people, and there was no peace in class at school, because there were loudspeakers, circuses and so on. There are still gatherings, and people and goods are always weak. The purchase of things is already very convenient.
New Year's Eve: New Year's Eve is of course important. Before eating New Year's Eve, you should put up Spring Festival couplets, set off firecrackers, then close the door and have dinner. After dinner, you can get a birthday bag-perhaps in many places. Keeping watch at night, the so-called keeping watch, is converted to sleeping with the light on in my house. At midnight, there will be a lot of firecrackers, because it is the second year.
the first month: in the first month, people usually eat rice cakes, which means getting taller every year; Or dumplings, which are naturally round and round.
The first day of the first month is usually the day to pay homage to the grave. Of course, you can also start to pay New Year greetings. Carrying all kinds of cakes and gifts, families came to worship. When you arrive at someone's home, you will usually find yourself sitting at a table full of melons and fruits, drinking some tea (someone who is good will put some sugar in the tea), then eating snacks (usually dumplings), and then eating. In short, eating is the core. Generally, when you leave, there will be a gift replacement. If you have a child, there will usually be a red envelope.
In the town, old houses are rare. Regarding place names, there are still sayings of "East Gate, West Gate, South Gate and North Gate". The East Gate is roughly in the position of today's Tangxi First People's Hospital and Bus Station, and the North Gate is in today's Tangzhong Old Campus. Even today, Tangxi people still use these names, such as "I'm going to the East Gate today", "Dongmenshan" and "Ximentou". It can be seen that the previous customs and habits have a great influence on Tangxi people. It is said that there have always been moats and gates, and the stone lions are very tall and mighty. When people went to Tangxi in the past, they all said that they were "going into the city", and Tangxi people were also called "city people"-those gates, but during the Cultural Revolution, they were all destroyed by the crane.
