Preparation steps: 1. Peel the winter melon, remove the cotton and cut into small pieces for later use.
2. Soak the vermicelli in water until soft.
3. Cut the lean meat into thin slices and set aside.
4. Heat oil in a pan, add ginger slices and green onions and saute until fragrant.
5. Add lean meat sauce and stir-fry until it changes color.
6. Add appropriate amount of water, put in the winter melon cubes, bring to a boil over high heat, then turn to low heat and simmer for 20 minutes.
7. Add vermicelli and cook for 5 minutes.

If you like the soup thicker, add an appropriate amount of water to thicken it.
