Method 2: Blanch fresh bamboo shoots in boiling water for a few minutes, rinse them with cold water, blanch them when eating, then fry them with meat or make them into a dry pot. Generally, red bamboo shoots should be cooked first, then bleached with clear water for one day, then sliced or shredded, blanched, fried in oil and added with appropriate amount of sugar.
