1. Remove the roots from the leeks, wash and cut into fine pieces; cut the old tofu into two pieces and cut into triangular pieces; cut the red pepper into fine dices.
2. Heat 2 bowls of oil, add old tofu cubes, and fry over high heat for 10 minutes.
3. When the old tofu turns slightly yellow, use long chopsticks to separate the stuck tofu, pick it up and use kitchen paper to absorb the remaining oil.
4. Take an empty bowl, add minced leeks and 1 tablespoon of salt, add half a bowl of cold boiled water and mix thoroughly to make a dipping sauce.
5. Take a small dipping dish, add an appropriate amount of leek salt water, and place it in a large dish.
6. Place the fried tofu next to the dipping plate, sprinkle with diced red pepper, and dip it in the chive salt water when eating.
