In the second step, we first fry the sugar color in the oil pan and put an appropriate amount of cooking oil in the pan. When the oil is 60% hot, we first put the pork belly in the wok and stir-fry it. Add some oil, wait until the surface of our pork belly is almost golden brown, and all the oil inside is stir-fried, then control the oil a little, take it out, put it in a bowl and set it aside. Then put the rock sugar into the pot and fry slowly. When we fry the rock sugar, we must turn to low heat and fry little by little. When the rock sugar is completely melted, pour the pork belly into the pot and add an appropriate amount. Turn the boiling water to high heat and cook together. Make sure the water you add should cover the pork belly.

The third step, wait until the high heat boils, then turn to low heat and simmer slowly until the water we add is 1/3 of the original amount, then you can add some dark soy sauce and salt. Season it, and finally add it to high heat to reduce the sauce. Sprinkle a layer of chopped green onion before serving. It's very delicious.
