Sour bamboo shoots are a kind of pickled vegetables commonly eaten by Malipo people, while boiled snails with sauerkraut are traditional dishes of Dai people. Usually, Dai women take snails home from the fields and keep them in pots for a few days. After the snail spits out the mud, gently break the snail's shell, wash it with clear water, and then add some oil and salt to cook it together. When they are 78% mature, they can be cooked in sour bamboo shoots and eaten. The vegetable soup is clear and the bamboo shoots are white. Snails are as delicious as tremella.
