2. Beginning of summer eggs. Eating eggs at the beginning of summer is a custom in Jiangnan. On this day, people use tea leaves or walnut shells to boil eggs in the Beginning of Summer. Folks believe that eating eggs in the Beginning of Summer can strengthen the body. Children like to tie hard-boiled eggs with colorful ropes and hang them on their chests. Legend has it that this can protect children from summer fever.
3. Beginning of Summer tea. Lixia tea, also called Qijia tea, is a custom of Lixia in Jiangsu and Zhejiang. On the day of Beginning of Summer, when new tea comes on the market, women will gather tea leaves from seven families and cook and drink them together. It is said that drinking Beginning of Summer tea can prevent summer heat and allow you to spend the summer healthily and safely.
4. Beginning of Summer porridge. During the Beginning of Summer, every household in Leiyang, Hunan Province cooks Beginning of Summer porridge. Beginning of Summer porridge is made of more than ten ingredients such as lean meat, vermicelli, glutinous rice balls, red dates, pork offal, dried bamboo shoots, red dates, peas, bean sprouts, etc., and is added to rice to make a fragrant porridge.
5. Lixia Kueh. Lixia Guo, also known as Lixia Kueh, is a specialty food of the Lixia solar term in Yiyang, Jiangxi. On the day of Beginning of Summer, every household will cook a big pot of Beginning of Summer cake and eat it all day long. Lixia Kueh is steamed rice, then kneaded into small balls, then added with ingredients such as bean sprouts, dried tofu, dried shrimps, and peas to cook into "Lixia Kueh", also called Lixia Soup. According to legend, eating Lixia Kueh means welcoming spring and welcoming summer. The more varieties there are, the richer the spring harvest will be and the celebration will be more than enough.
