Ingredients for stir-frying hemp leaves: 300 grams of common flour, 30 grams of lard, 3 grams of salt, baking soda 1 gram, cold water 160 grams, and a proper amount of cooked black sesame seeds.

Making:

1, add lard to the flour, stir well and knead, then add seasonings such as salt, baking soda and black sesame, and finally mix the flour with cold water.

2. Knead the dough into smooth dough for half an hour.

3. After the dough is baked, sprinkle dry flour on the chopping board, and then roll the dough into a rectangular crust. The thinner the better, it will be easier if you have a dough press at home.

4. Cut the dough into rectangles, then start stacking, and then cut into rectangular dough. The specific size can be adjusted according to your own preferences.

5. Start modeling. Two patches are stacked together, then folded and cut three times, but don't cut off the top position.

6. Cut it and spread it out, stretch it a little, put two corners at one end into the hole in the middle, and the shape will come out. When finished, cover it with plastic wrap and save it.

7. Heat oil in a hot pot. When the oil is 50% to 60% hot, stir fry in the pot, keep the fire, float and turn over, control the oil and then take it out of the pot for coloring.

It was a little hot when it was first fried, but when it was slightly aired, the oil content was less, and it was crisp and delicious. The key is to add black sesame seeds to it, which makes it more fragrant.

The following is the key point! When mixing flour, use oil first, because oil can prevent the formation of gluten in flour, and then mix flour with water, so that it is not easy to harden. Oil can be butter and lard, lard has the best effect, and it is easy to be hard but not brittle when fried in ordinary food.

Dough is necessary. If the dough is put away, it is convenient to roll the skin. If it is not loose, it will shrink back when rolling.

Roll the crust as thin as possible.

When frying, use a big fire, so that the hemp leaves are not easy to accumulate oil, and the heat is too small, and the fried hemp leaves are all oily.

After frying until golden and colored, take it out immediately. Don't continue frying, it's easy to paste.
