Crispy sweet and sour eggplant

Wash the eggplant, cut it into small strips, put it in the pot, sprinkle some salt, grab it evenly with your hands, marinate it for a while, and then pour off the water for later use.

Beat two eggs in a bowl, then sprinkle some corn starch, pour in a little water and stir into a thick batter. Then put the pickled eggplant into the batter and let it be evenly covered with a layer of batter.

Pour wide oil into the pot, heat the oil to 70% to 80% heat, then add eggplant, fry the eggplant until the color is golden and the skin is crisp, then take it out and drain it.

Take a bowl, put sugar, salt, monosodium glutamate and starch in the bowl, pour rice vinegar, soy sauce, oyster sauce and a little water, and stir well.

Leave a little base oil in the pot, pour in the sauce we have prepared, stir-fry until fragrant, add eggplant, stir-fry evenly over high heat, and then take out the pot and set the plate.

Crab tofu

Cut onion into chopped green onion, cut tofu into pieces, take out salted duck egg yolk and put it in a bowl, then crush the egg yolk for later use.

Pour water into the pot, boil the water, blanch it in the tofu block, and drain it for later use.

Take another pot, pour oil, add duck egg yolk, stir fry, add tofu, sprinkle some salt to taste, pour water starch to thicken, then turn off the fire and put on a plate, sprinkle some chopped green onion to decorate.

Roasted sparerib

Take a bowl, pour cooking wine, rice vinegar, soy sauce, soy sauce and a little water into the bowl, add sugar and stir well. Peel garlic and pat it flat. Chop the ribs into small pieces for use.

Pour water into the pot, blanch the ribs in cold water, remove the floating foam and wash for later use.

Take another pot, pour the oil into the pot, heat the oil, stir-fry it in a garlic wok, then add the cooked ribs, stir-fry the ribs to get oil, then pour in the prepared sauce, stir-fry for a while, and then pour in a proper amount of water. After the water has just passed the ingredients, turn to low heat and stew for about half an hour. Finally, sprinkle some salt and monosodium glutamate to taste, and turn on the fire to collect the juice. The soup will be boiled until it is thick.
