Diguo Chicken Method
Ingredients
Chicken, mushrooms, fungus, potatoes, tofu, lettuce and other ingredients are appropriate, 4 or 5 dried red peppers, 2 star anise, a little cinnamon and pepper, several slices of ginger, several garlic, light soy sauce, cooking wine, salt and onion.
Practice
1. Chop the chicken into chicken pieces, wash it with hot water several times to clean the blood (I don't like to pass water, so I use this method), and drain the water.
2. Add oil to the wok and heat it to 5%. Stir-fry dried red, star anise, cinnamon, pepper, ginger slices and garlic until fragrant. Then add drained chicken pieces, stir-fry over high fire until the chicken pieces taste fragrant. Add light soy sauce, cooking wine, salt and sugar, stir-fry evenly, add clear water and simmer for 2 minutes.
3. Add cooking-resistant ingredients such as mushrooms and auricularia, and stew for 2 minutes. Finally, add cooking-resistant ingredients such as potatoes and lettuce, and cook. Add onion and take the pan.
