1. Soak the sweet potato starch half an hour in advance.
Mix eggs, cooking wine, soy sauce, olive oil, starch, Sichuan peppercorns and pepper noodles into the minced meat.
2. Cut the cabbage into strips horizontally.
Finely mince onion, ginger and garlic.
3. After the oil is hot, stir-fry the minced meat until fragrant, add minced ginger and garlic, two tablespoons of Pixian bean paste, and use a small amount of oil.
Stir fry until golden brown.
4. Add water to the pot, add more.
Cover the pot and bring to a boil.
5. After the water boils, add the vermicelli, add some soy sauce, and some chili sauce.
This is my homemade sauce.
Then cover and cook.
6. After cooking the vermicelli for 6 to 7 minutes, add the cabbage. Taste for saltiness and add salt.
7. When the cabbage is cooked, sprinkle with chopped green onion.
