Ingredients: appropriate amount of herring; appropriate amount of green onion, ginger and garlic; appropriate amount of pepper and aniseed; salt; vinegar; appropriate amount of cooking wine and white sugar; appropriate amount of cooking oil and light soy sauce.
The steps are as follows: 1. Remove the head and internal organs of the purchased herring, clean it and set aside.
2. Wash and cut the onions into sections, wash and slice the ginger, and chop the garlic into cloves.
3. Pour cooking oil into the pot and cook for eight minutes.
4. Add the fish, fry on both sides, then add the peppercorns, aniseed, vinegar, cooking wine, salt, onions, ginger, garlic, sugar, and light soy sauce.
5. Add water to the level of the fish, bring to a boil over high heat, and simmer over medium heat.
