01 Many times, when we miss a city or a person, we will constantly think of the food in that city and the person who can cook the food.
But in the final analysis, it is that taste that we miss, that mixture of human touch, love and experience.
Just like what Qiao Jia signed for me in her new book "Eating a Broccoli Well": Tasty food is a human touch.
When it comes to food, for foodies, there must be a lot to talk about.
But I am not a strict foodie, because I am a lazy person. I like to try the strategies given by others, and occasionally I make some delicious food myself.
Just because I am too lazy, I will not search for delicious food. I will be grateful when I encounter it and want to taste it many times.
If you can't meet it, you just miss it, no regrets.
Even though I'm not a strict foodie, I have a lot to say about food.
02 I know a friend, she can be regarded as a serious foodie.
When you first met her, you knew that you didn't have to think about what to eat when you were with her.
The problem of the century, "What to eat for lunch?" was not a problem for her at all.
Where can I find something delicious?
What's the best way to eat it?
Sometimes she even knows how to match food that requires two restaurants.
Being with her is the greatest happiness for a lazy and food-loving person like me.
The restaurants she chooses range from star hotels to street vendors.
The cuisine ranges from Chinese food from Hunan, Guangdong, Henan and Sichuan to foreign food from France, Japan and Korea.
The taste ranges from salty and spicy, sour and bold to sweet and delicious, warm and elegant.
People like her.
I can never forget her. Every time I talk about food, I always think of her.
We haven’t seen each other for many years. I look forward to meeting you next time and having fun together.
03 There is a sentence on the inner cover of Qiao Jia's book "Eat a Broccoli Well": Such a pleasant winter evening reminds me that when we were children, we loved to drink the "spicy soup" made by our grandma.
People who have eaten Henan's classic dish "Hu Spicy Soup" should know that Hu Spicy Soup is for people with heavy tastes.
The spicy spicy soup sold on the market now is made from thick ingredients.
It's called soup, but it's actually very thick.
It contains beef slices, gluten, fungus and other ingredients.
The taste is numb and spicy.
If you don't like spicy food, drinking this will make you cry.
However, the "Hu spicy soup" that my grandma used to make did not taste like this.
She lives in the countryside and uses natural ingredients in all her meals without adding any ingredients.
Therefore, the process of making spicy spicy soup is very complicated.
First, wash the noodles with water to create a thick noodle soup and extremely elastic gluten (this is natural gluten).
Then wait for the gluten to wake up and set aside.
Grandma used this noodle soup to add some simple ingredients, including minced leeks, egg flowers, day lily and other vegetables that can be found everywhere in the farmland, and simmered them together slowly. Since it is a noodle soup, it prevents it from sticking.
The pot needs to be stirred constantly during the process, and it takes a long time to make the entire "Hu spicy soup".
Whenever grandma makes it, my brother and I are always rushing to drink it.
What I remember most clearly is that as a child, I had to use an adult bowl to drink two or three bowls of the "Hu spicy soup" made by my grandma.
If my stomach couldn't hold it anymore, I wouldn't get tired of the taste.
Later, my grandma passed away, and I haven't had such delicious food for many years.
But the taste and feeling can never be forgotten, and I still miss it to this day.
This feeling is just like what Qiao Jia said in the book "My Grandpa Can Cook Fish": The person who made the fish in the first place is old.
But for me, the grandma who knew how to make delicious food is gone.
That taste is hard to find in this life.
04 A good friend posted in WeChat Moments: A person who has never eaten noodles since he was a child, but when he comes to his in-laws’ house, he eats noodles every day. Does he want me to lose weight?
Maybe her husband's family didn't know that she hadn't eaten noodles since she was a child.
Maybe they think that since they are not far apart geographically, their eating habits should be similar.
In fact, diet is based on the family unit.
Every family's eating habits are unique.
They are all different from any other family.
I believe that my sister and brother and I can eat together, because we have been eating the food cooked by our parents since we were young, and we have been accustomed to this taste for many years.
Because my parents like to eat softer rice and vegetables.
Therefore, the cooking time will be longer every time, and the fried vegetables will be "very cooked".
I'm used to it, and I think it's delicious.
I even thought for a while that everyone liked to eat like this.
Until, I met my husband.
Their family is not very particular about what they eat.
He said that when he was a child, his family was poor and it was good to have enough to eat.
Not to mention the requirement of "all colors, fragrances and flavors".
Later we got married and had children.
My father-in-law came over to help. He likes to stir-fry the vegetables a little and then cook them. The taste is also strong.
Every time I take a bite, I say: This dish is still raw, should I reheat it?
For this reason, we often have disagreements. When I say the food is raw, he says it is already cooked; when I say it is too salty, he says it is bland.
There were occasional conflicts over diet.
But it worked out in the end.
