Beancurd chicken originated in the 1980s. A chef named Ye Wo in Shilong created a unique chicken with smooth skin and smooth meat. Because Master Ye had suffered from smallpox and had pits on his face, the neighbors jokingly called this chicken bean curd chicken. Later, the secret recipe of tofu skin chicken, which became very popular, was gradually lost under the great wheel of time.
