Meat filling preparation process
1. Rinse the pork belly with clean water, cut into slices with a knife and then chop into pieces.
2. Chop the shallots into finely chopped green onions, peel and mince the garlic and ginger, put them in a small bowl and mash them into a paste with a rolling pin.

10. Soak the black fungus in cold water in advance and cut into mince. Wash, peel and mince the carrot, and cut the shallot into chopped green onion.
11. Put the chopped black fungus, carrots and green onions into the meat filling.
12. Use chopsticks to stir the minced vegetables and meat filling in one direction.
13. How to cut eggplant with a blade: Wash the eggplant with clean water and place it on the chopping board. Use a knife to cut off the eggplant stems at both ends.
14. Use a knife to make the first vertical cut at one end of the eggplant at a certain distance from the cut surface.
15. Cut until the edge of the knife touches the side of the eggplant that is in contact with the chopping board, but do not cut off.

25. Prepare a clean and water-free plate and pour an appropriate amount of cornstarch into it.
26. Apply a layer of cornstarch evenly to both sides of the eggplant box with the meat slices sandwiched between it.

31. Pour the prepared sauce on the eggplant box.
32. Make the sauce evenly distributed in each eggplant box.
