Grilled fish.
Ingredients: croaker, onion, ginger, garlic, green garlic, tofu skin, soybean sprouts, Pixian bean paste, diced green and red pepper, salt, peanut oil.
Method: 1. Wash the croaker, cut the surface with a knife, blanch the soybean sprouts, tofu skin, and green garlic and set aside.
2. Chop the green garlic, green onion and ginger, dice the green and red pepper, and blanch the tofu skin.
3. Add peanut oil to the pot, fry the croaker over high heat for a while, then remove.
4. Add peanut oil to the pot, add Pixian watercress, garlic, green garlic, green onion and ginger and stir-fry until fragrant.
5. Pour in the blanched soybean sprouts and tofu skin, stir-fry evenly, and spread to the bottom of the pot.
6. Add a little water, add the fried croaker, cook over medium-low heat for about 10 minutes, turn the fish over in the middle.
7. Add salt to taste, sprinkle with diced green and red pepper and minced green onion.
8. Cover the lid and let it cook for a while, then turn off the heat for about 3 minutes.
9. The simple grilled fish is ready. If you like it spicy, you can add dried red pepper or chopped pepper, both are great.
Because my family can't eat very spicy food, I didn't add chopped chili peppers and dried chili peppers.
10. Serve it directly on the table and eat it. Just turn it on low heat when eating. It is delicious and the fish meat is fresh and tender.
