Secrets of hot pot restaurants that Chengdu natives are reluctant to share

Last week I went to Chengdu with girls Guagua and Jiuyuan. As a fake Chengdu native who has been away from home for many years, I naturally took on the task of tour guide, and hot pot must also be arranged.

When it comes to choosing traditional hot pot, I prefer small shops located in residential areas.

However, in order to highlight my advantages as a local, I decided to arrange some additional Chengdu hot pot dishes that foreign friends seldom try, let’s call them fancy hot pot for the time being.

In fact, in Chengdu, chicken, fish, rabbit, frog, and even tofu pudding can become the protagonists of hot pot.

Therefore, in addition to traditional hot pot in Chengdu, various fancy hot pots are a more local choice.

Combining my experience of living in Chengdu for twenty years, as well as stalking, begging, and coercing my friends in Chengdu, I finally obtained this list of hot pot restaurants that Chengdu natives are reluctant to take out (at the end of the article).

These restaurants are delicious and not expensive. The lowest per capita consumption is only 30.

After testing several out-of-town friends with me, Guagua and Jiuyuan, I quickly came to share with you these hot pot restaurants where people in Chengdu are also lining up.

Only if it is opened in the community is it delicious!

In the past two years, there has been a trend of old hot pot in Chengdu, usually in the form of community stores. The store is small, the environment is ordinary, but the taste is "Bashi Deban".

We squeezed into the small hall with the locals and ate hot pot that had the unique atmosphere of market fireworks.

Youth Hotpot business hours: 10:00-23:00 Address: One each on Baiyun Street and Jiaochangba Youth Hotpot is a rising star among the old hotpots in the Yulin community. The main store is in Yulin, and this one is a branch in the city center, not far from Chunxi Road.

Far away, hidden in an old residential area.

I originally thought that the newly opened branch must be more grand, but I didn't expect that it is still a small store with only seven or eight tables in total.

The bottom of the pot is slightly spicy. When it was first served, the pot was full of butter and chili. After seeing it, Guagua and Jiuyuan suspected that the store had made a mistake.

As a Chengdu wanderer, I couldn't help but burst into tears when I saw the thick butter. This is hot pot. What are those things from other places with a thin layer of red oil floating on the surface?

Add water and turn on the heat. In fact, the taste of the Youth Hot Pot base is relatively mild. As the store owner said, it is "spicy and sweet".

After boiling the bottom of the pot, serve the dishes. Be sure to order the dry tribute dishes. You can eat them after boiling them for a while. It tastes crispy and will become "raked" after cooking for a long time. It is not delicious. It is not delicious in hot pot restaurants in other places.

Basically you can't eat it.

Dried cauliflower is also very delicious, but unfortunately it was no longer available when we went.

Fresh duck blood is also a must-try. The red duck blood is shaking in the stainless steel bowl, as if it has just solidified.

Pour it all into the pot without stirring, turn on high heat and bring to a boil. When the duck blood floats on the surface, you can pick it up and eat it.

It's so fresh, so tender, so delicious, I can't help but salivate when I think about it.

The spicy beef slices look very heavy, but in fact the chili noodles will fall off when put into the pot. The thick paste only makes the meat slices more flavorful. When it changes color, you have to pick it up and eat it, otherwise it will be too old.

Their crab sticks, lunch meat, and chicken feet are all very good. The only thing I don't recommend is the tender pork slices. The flour is too thick and it tastes too smooth and doesn't feel like eating meat.

For others, just order whatever you like, the joy of hot pot is so simple.

Similar recommendations: Hongshe, Zhengyuan, Wuliguan, Xujijunwei are all community hotpot leaders that have emerged in recent years and are widely praised.

Scum Girl and Huang Xiaosha are not as well-known as the previous ones, but they are my friends’ favorites.

Hotpot restaurants in Chengdu are updated and iterated very quickly. Some of them tasted good when they first opened. After being widely popular, they began to join franchises and embarked on the path of capital. They expanded rapidly but neglected quality.

These companies are currently focusing on making hot pot, and some branches are also self-operated. They are in the "best tasting period" and it's hard to say what will happen in a few years.
