In China's extensive and profound food culture, the food in Inner Mongolia occupies an important place. Among them, Chifengdui Street is not only attractive, but also has its own story.
Across the street from Chifeng is a unique traditional food in Chifeng. This is a local snack, wrapped in smoked pork and shaped like a China hamburger. It has a history of 100 years and is deeply loved by local people.
It is said that Su Wenyu and Su Debiao from Hebei Province were forced to do business in the Jehol area of Chifeng City in the early years of the Republic of China 19 17. At that time, there was a very famous sesame seed cake in Chifeng called "Hada fire", and Su family made a living by selling sesame seed cakes. Because there are many biscuits, the biscuits in Sujia are not very delicious. Later, inspired by the "donkey fire" in their hometown, Su's father and son combined Hada fire, donkey fire and the skills of the Forbidden City bacon that Su Debiao stole when he was an apprentice in Beijing Yushenglou butcher shop in his early years, and smoked pork in the middle with flour as the skin, creating a "meat biscuit" with unique technology and flavor, named "Duijie". Sue's family opened its first shop in Toudao Street, named Fu Shenglong.
In the long-term business practice, Fu Shenglong has formed a unique snack culture. According to the book Zhao Uda Style, when you go to Fu Shenglong to buy a pair of hair clips, the store is clean and tidy, and all the guys in the store are smiling. You must ask the customer first: "Do you want fat or thin, or lean meat?" Then, according to the customer's requirements, the bacon was cut and weighed, and then the bacon was sliced and placed in the semi-open interlayer of the sesame cake, and a pair of clips were made on the spot. If you eat it in a shop, it will be served with wonton and seaweed soup with coriander and shrimp skin as auxiliary materials; If you take it with you, please wrap it in red and green plywood paper and tie it with a paper rope to make it easy for customers to carry. Besides, Fu Shenglong always sells hot sandwiches in winter and summer, and never sells cold sandwiches. Later, there were countless shops specializing in goods in Chifeng, but this "hot to customers" service mode was passed down consistently.
The traditional sandwich method in Chifeng is to mix flour, oil and water according to a certain proportion, then add salt, vanadium, spiced powder and a little sugar to make dough, knead it thoroughly, roll it into thin slices, spread a layer of cakes made of millet flour and lard on it, roll it up, pull it into small cakes, and bake it in the furnace before adding bacon.
The key to Chifeng delicious sandwich is the crispness of sesame cake and the taste of bacon.
The sesame cake used in Chifeng originated from the "fork sesame cake". Different from ordinary sesame scones, this scone is not only different in dough mixing and production technology, but also needs to be covered with ghee mixed with millet flour after the scone is taken out of the hanging furnace, placed on an iron fork and baked again with low fire. The sesame cake made in this way is crisp outside and soft inside, and has a unique flavor.
Chifeng is also very particular about the bacon in the folder. The meat in the folder is preferably fat and thin bacon, which is cooked, dried and smoked with sugar. When you are in cook the meat, you should use more than a dozen selected ingredients to flavor it. It is fragrant but not greasy.
Authentic Chifeng with gold skin, distinct layers, delicate meat, rich fragrance, thin but not firewood, fat but not greasy, tough but not broken, crispy and delicious, with a long aftertaste. Chifeng across the street is therefore called "China Meat Burger".
Chifeng across the street is a well-deserved business card of Chifeng cuisine, and it is also the sustenance of Chifeng people's homesickness. Ma Boyong, a famous Chifeng writer, once walked into the column of "Delicious China" of CCTV to introduce Chifeng Dui Street, so that the people of the whole country could know this Chifeng cuisine.
20 1 1 year, Chifeng was rated as a famous snack in China by the catering association. From 20 17 to 10, Chifeng's match skills were recognized as "the intangible cultural heritage of Inner Mongolia Autonomous Region".
Many friends who come to Chifeng from other places will bring some clips back to share with their families when they leave Chifeng. As a unique snack in Chifeng, Chifeng across the street has been recognized by more and more foreigners for its delicacy.
