Food and festivals
Although I don't want to, I have to admit the fact that the holiday after the New Year is coming to an end, and many people have returned to work and started a new journey. But don't be discouraged. Secondly, China attaches great importance to a festival, which is the Lantern Festival. Lantern Festival symbolizes family reunion, family happiness and reunion. It is a beautiful little tail of the Spring Festival. Only after this day can we really enter the new year. People can't celebrate the Lantern Festival without the contrast of food. The traditional food is Yuanxiao (called Tangyuan in the south), and jiaozi is eaten in the north. Besides, there will be a big table of rich food on the table. Think about it and look forward to it. Among them, these five traditional cuisines most often appear on the dining table, which means good luck. How much did you eat?

The first kind: lettuce

Lettuce is homophonic with "making money", which means wealth, auspiciousness, promotion and wealth. In the north, lettuce is mostly eaten in oyster sauce, which is nutritious, delicious and auspicious.

Practice: 1. First, blanch the washed lettuce for a few minutes, then take it out and control the water; 2. Then, respectively mix the fruit juices in bowls, add light soy sauce, black soy sauce, oyster sauce, salt, garlic, white sesame seeds, sesame oil and starch water and stir; 3. Then heat a little oil in the pot, stir-fry the oil until it becomes thick and pour it into the lettuce.

The second type: hair cake

Different from the rice cakes in the south, some places in the north will eat steamed cakes and make them into cakes during the Lantern Festival. Because "cake" and "high" are homophonic, making cakes means step by step promotion, wealth, auspiciousness and prosperity.

Practice: 1. Soak the red dates in clear water and steam them for about a quarter of an hour. Squeeze the red dates out of the mud with a spoon, remove the jujube stones, and add sugar into the jujube mud and stir evenly; 2. Put the corn flour and flour into the pot, melt the yeast with warm water, then add it, and continue to add a little baking powder and baking powder. In order to increase the fluffy feeling of the hair cake, pour in the stirred jujube paste, add some warm water to mix the dough, and start to wake up. It is cold in winter, so you can put it in the pot as soon as you wake up, and use less hot water to raise the temperature for fermentation. You can also use the oven to ferment faster, and it will ferment well in about half an hour. 3. After the dough is fermented, steam it on high fire for 40 minutes.

The third kind: noodles

The reason why we want to eat noodles at the Lantern Festival is because there is a saying among the people: "Put the Lantern Festival on, put it below, and look forward to next year after eating." Eating noodles on Lantern Festival means long, smooth and good luck in the coming year. Lantern Festival is in the freezing season. Let's have a bowl of steaming noodles to warm our stomach.

It's simple. You usually make tomato and egg noodles. 1. Put oil in the pan and fry the eggs first. 2. First, cut some shredded onion, stir-fry, then pour in diced tomatoes, stir-fry the sauce slowly, then stir-fry with eggs, add seasonings, and add garlic sprouts to enhance the fragrance; 3. Add water to boil, add noodles, take out and pour in fried tomatoes and egg toppings.

The fourth kind: eggs

As a well-known food, eggs are often easily overlooked. I didn't know that eggs are also one of the traditional foods. It is easy to appear on the table of the Lantern Festival, because the shape of eggs is similar to a circle, which has the inherent meaning of roundness, beauty and completeness.

There are quite a lot of practices about eggs, so I won't state them again. You can fry, cook, stir-fry and eat according to your own preferences.

The fifth kind: fish

Fish is not only eaten in the New Year, but also on the table of the Lantern Festival. As the saying goes, "no chicken, no feast, no fish, no table". Fish means a rich life, like a duck to water, and many children are blessed, so it is auspicious to eat fish on the Lantern Festival.

There are quite a few practices about fish. Generally, a braised fish will be fine. 1. First, clean the fish, cut it with a flower knife to make it easy to taste, and add soy sauce, salt, cooking wine and spiced powder for pickling. 2. Heat oil in the pot, stir-fry chopped green onion and minced garlic with oil, add Chili oil, oyster sauce, soy sauce, thirteen spices, red Chili sauce and a little salt, and add two bowls of water to start stewing fish; 3. After stewing for 20 minutes on low fire, change it to high fire so as to collect the juice as soon as possible, then put it on a plate and sprinkle with chopped green onion.

The above five traditional cuisines have been introduced. They frequently appear on the dinner table of the Lantern Festival, but not everyone has eaten them. What have you eaten?
