When I saw the word "Wuwei" in summer, Zhou Jun immediately thought of the icy "Liangzhou".
For mainlanders, in addition to being cool and pleasant in summer, the most distinctive food in Wuwei, Gansu Province is naturally "Liangzhou three sets of cars".
The so-called "three sets of cars" are Liangzhou noodles, braised pork and rock sugar jujube tea. The three must be matched together to complement each other perfectly, and with its affordable price, it has become one of the most common street fast food in Wuwei.
It is said that this snack was a military supply created by local chef when Zuo Zongtang passed through Liangzhou. After eating, Zuo Zongtang praised: This is our army's "three sets of cars" and it is indispensable!
Zhou Jun focuses on noodles, which are made of flour, salt water and linseed oil. When eating, the master presses them into flat strips with the palm of his hand, and then uses a skillful volley to make the noodles.
Braised pork is relatively simple. Pork or pig's belly is stewed and dipped in shredded green pepper, shredded garlic and Chili sauce.
As for the red jujube tea, it's a little good-there are enough materials, such as rock sugar, longan, walnut kernel, dried red jujube, medlar, raisins, tea and so on, all of which are cooked together into wine red, which is beautiful and delicious, and is known as "local coffee" in Liangzhou.
I am an old Wuwei native born in 1973. I don't think the name of the three sets of cars has a history of more than 2 years, and it can't be related to Zuo Zongtang. A foreign song "Three Cars" was very popular in dance halls in the 199s. Later, noodles, bacon and tea were called three sets of cars. History can't be written nonsense!
In fact, the food in Wuwei is very distinctive, and many people don't know it. Here is a brief introduction to one or two. Wuwei has a long history of cold noodles, which can be seen in some old photos of Wuwei more than 1 years ago. The famous ones are Guo cold noodles and Liu cold noodles. Wuwei's dough is also not found in other places, and it is famous for its Jijia dough. Wuwei's braised pork is also famous for a long time; Wuwei's rice soup soaked in glutinous rice is also very famous; Wuwei's noodles are also famous for a long time. The old man said that after the opening of the Silk Road, merchants invented a kind of pasta on the way of doing business, and later it spread along the Silk Road. Now some Lamian Noodles, pulled noodles and so on are derived from this. These snacks are at least traditional snacks for more than 2 years, and diners can go and taste them.
Are you from Wuwei? It's white sugar.
