Ingredients: soaked young ginger, soaked cowpeas, soaked red pepper, shredded pork, a little salt, chicken essence, corn starch, cooking oil and chopped green onion.
Method:
1. The pork shreds must be mixed evenly with corn starch, a little salt and water, so that the shredded pork wrapped in gravy powder will be tender when fried. Get a frying pan with oil that is about 60% hot. Add the shredded pork wrapped in cornstarch powder, break it up, and quickly fry until the shredded pork turns white.
2. Then add the soaked cowpeas cut into sections, the pickled young ginger cut into slices and the pickled peppers cut into cubes, and stir-fry together.
3. When soaking cowpeas, you must choose harder and thinner ones, so that the fried cowpeas will have a crispy texture. Because kimchi can be eaten raw, you don’t need to fry it for too long. After stir-frying a few ingredients evenly, you can put it on the plate. Then sprinkle some chopped green onion for garnish.
4. Isn’t this appetizing and delicious side dish very simple? Young ginger is sour and spicy, cowpeas are crisp and slightly spicy, and pickled red peppers are the finishing touch, making this dish look more comfortable in terms of color.
