1, Dafang Douchi
In Guizhou, we also eat something called lobster sauce. In fact, when we eat Laoganma, there is a taste that Laoganma is lobster sauce. Douchi is usually dipped and then used for fried rice, which is the most fragrant. How is lobster sauce made? It's actually quite simple. First, cook the beans, put the cooked beans in a bag with a certain temperature, let them ferment naturally, put them in the sun for a week and dry them. This kind is simply air-dried and can be directly fried with Chili. If there is any, mix the oil pepper and make it look like the one in the picture. In Guizhou, there is another way to eat fermented lobster sauce. Before stirring, cook the remaining soup of beans, add salt and ginger and store it in a jar to make fermented beans.
Farmers only cook lobster sauce in winter. Even if it is seen in summer, it is dry in winter. Now Laoganma can eat lobster sauce, but what Bian Xiao misses most is that wild onions fried with lobster sauce on the mountain are the best.
