I recently tried lotus leaf rice. If I want to make delicious lotus leaf rice, there are still a few details that need to be paid attention to.
First of all, the rice must be fragrant and soft.
So be sure to soak the glutinous rice and rice before making it.
I usually start soaking the night before!
The second point is the side dishes. You can add whatever you like to eat with the side dishes. They are completely prepared according to your personal taste. I generally follow the principle of "matching meat and vegetables to double the nutrition" and add my favorite carrots and corn kernels.
Add pork belly and shrimp.
Everyone can also feel free to choose side dishes.
A portion of lotus leaf rice that is soft and non-sticky, plus sweet sausage, mellow mushrooms, fresh and tender shrimps, carrots and corn kernels, it tastes so satisfying!
Material preparation: rice, glutinous rice, corn kernels, carrots, chives, pork belly, Cantonese sausage, soak until fragrant. The first step is to soak rice and glutinous rice in a ratio of 1:1 overnight (at least 6 hours or more, otherwise it will be steamed)
The rice will be a bit hard).
Soak lotus leaves in warm water for an hour, then rinse.
In the second step, put lotus leaves on the steamer first, and then put the rice on it. You can use chopsticks to poke small holes so that the rice can be steamed more easily.
Steam for 25 minutes.
The third step is to use the steaming time to marinate the ingredients, remove the shrimp lines and shells.
Add a spoonful of cooking wine, light soy sauce and oyster sauce to the pork belly and shrimp, a teaspoon of cumin powder and salt, stir and marinate.
Step 4: Add appropriate amount of oil to the pot, add marinated shrimp and pork belly, and start stir-frying.
If you like the shrimp to be more tender, you can separate it from the pork belly and add the shrimp after frying.
Step 5: Stir-fry until fragrant, add Cantonese-style sausage and mushrooms and stir-fry.
The sixth step is to add corn kernels and carrot kernels and stir-fry.
Step 7: After frying, take it out, take out the steamed lotus leaf rice, and put the fried side dishes on top.
Step 8: Mix the side dishes and rice evenly, wrap the mixed rice in lotus leaves and steam it for 20 minutes.
Step 9: After steaming, you can sprinkle some green onions or coriander according to your own taste.
