That is actually just what the urban poor in the old city of Beijing eat or the farmers in the rural market. When I was tired from work, I went to the market and a hot bowl was brought to me. The roasted tofu and lungs had absorbed enough of the soup. The fire was thoroughly cooked but not sticky, the meat was rotten but not bad, the intestines were soft and soft, and the taste was thick but not greasy. , Occasionally eating a piece of white meat will make your mouth full of fat. A bowl of it will satisfy your hunger and cravings. For poor northerners, that is a kind of happiness.

The braised food restaurant was overcrowded. People of a certain age must add a side dish and a bottle of veal to eat slowly. But most of them were young people, and there were many young girls who ate with gusto. But I suspect they are just here to satisfy their desire to try old Beijing snacks. For these young people in Beijing, delicacies from all over the world fill the streets and alleys and can be eaten at any time.

I have been to Shanghai a lot recently, but there is really no food that I am interested in. Xiaolongbao and small wontons are specialties, but they are always a bit bland; roasted pork ribs are always sweet and greasy without the pleasure of eating large pieces of meat; pickled food dishes have a bit of flavor, but they are from the neighboring province of Zhejiang.

Fortunately, there is an Anhui cuisine restaurant and a Hunan cuisine restaurant near where I live, so I often go there to drink alone after get off work. Although it is not the original Hunan cuisine or Hunan cuisine, after all, it can still be regarded as the cooking method there. There are also gardens. It is exquisite, but I always feel that something is missing, such as the vastness of the northern grasslands, the grandeur of Beijing's buildings and roads, especially the generosity of northerners, which makes people feel depressed.

So every time I couldn’t stay in Shanghai for more than a few days, I missed Beijing’s braised food and the undulating hills and straight roads in the north.

After the defeat of the Northern Song Dynasty, the south gained the right time and location, especially the convenience of trade with Nanyang, and its economy developed. As the political center, the North has always been a battlefield for competition. Coupled with the decline of the Overland Silk Road, the economy has always been in a backward state.

As the world has developed to this day, the political landscape has undergone major changes, and the North has also ushered in opportunities for development. What determines all this is the long-term stability of the political situation. So far, yes.
