2. Peel and slice (2-3mm). Add salt (20g/kg papaya), stir by hand, and grasp and twist papaya vigorously while stirring until papaya becomes soft, which usually takes 2 minutes;
3. Then rinse with warm boiled water (about 40 degrees) once. Add a proper amount of sugar and vinegar (add a little pepper if you like spicy food), then stir well and wait 10 minutes to eat.
