I haven't eaten meat for many days. I went to the supermarket today to buy 2 pounds of pork ribs.
Fortunately, the price of pork ribs has not increased too much. 2 pounds of pork ribs cost less than 60 yuan.
Today I am going to make a ribs stewed with potatoes. It tastes so fragrant and is very simple to make.
1. Clean the ribs first after buying them to wash out the blood inside.
Then pour the ribs directly into a cold water pot and blanch them, add green onions and ginger slices, and then add cooking wine to remove the fishy smell.
Turn up the heat and cook for about 5 minutes, then turn off the heat.
Blanch the pork ribs in water so that the fishy smell will not be so strong when you eat them.
Then take the ribs out, wash them again, drain them and set aside.
2. Come down and stir-fry the sugar.
Pour a small amount of oil into the pot. When the oil is slightly hot, turn down the heat, add a few pieces of rock sugar and stir-fry the sugar color.
Crush the rock sugar and stir-fry until it is completely melted and the color turns maroon. Add the water-controlled pork ribs and stir-fry quickly evenly.
When frying the color of the sugar, you must pay attention to the heat. Do not over-fry it. If the heat is too high, the color of the fried sugar will turn black and the taste will be bitter.
If the heat is not enough, the color of the fried sugar will not be enough and the taste will be sweet.
Then add green onions, ginger slices, star anise, cinnamon, and bay leaves and stir-fry until fragrant.
Add light soy sauce and a little dark soy sauce and stir-fry.
Then add water, just enough to cover the ribs. Cover the pot and bring to a boil over high heat, then turn to low heat and simmer for 40 minutes.
Come down and prepare a peeled and washed potato, and cut the potato into pieces.
Wash the carrots and cut them into pieces.
After the ribs have stewed for 40 minutes, add the chopped potatoes and carrots and stew them together, cover the pot and simmer over low heat for 20 minutes.
Simmer on low heat for 20 minutes, add salt to the pot to taste, then turn to high heat to reduce the juice, and turn off the heat when the soup in the pot is thickened.
Finally, pour it into a larger basin, sprinkle some chopped green onion and enjoy.
