Youxi is adjacent to Shaxian, and snacks are similar, but there is one thing Shaxian snacks don't have, that is, big noodles. If you eat big noodles in Shaxian snack bar in other places, then this store is almost opened by Youxi people.
Therefore, noodles are synonymous with Youxi cuisine. There is even a saying that if you don't taste the big noodles when you travel to Youxi, you have never been to Youxi. Even Youxi people, who have left their hometown for a while, will miss the taste of noodles.
it's very simple to make big noodles.
first, make flour into dough, compact it and roll it to about 5 mm, fold it into strips, and then use a special cutter with a length of about 7-8 cm to cut it into long noodles with a width of 4-5 mm. Blanch the long noodles in a hot water pot, take them out and put them in cold water for cooling, take them out and circle them into balls according to roughly the same amount, and drain the water for later use.
when you want to eat, put the elastic noodles into the boiling hot water pot again. Boil for two or three minutes, scoop it out with a colander, shake it a few times, drain the attached water, put it in a sea bowl, add cooking oil, salt, monosodium glutamate, soy sauce, garlic vinegar, chopped green onion and other condiments, stir well, and a bowl of appetizing dry-mixed noodles will be ready.
if you order this snack in a snack bar, the store will also offer you a bowl of steaming soup. Soup is made of peeled pig's head, and it tastes sweet and delicious.
There are many ways to eat noodles, not limited to dry mixing, but also fried. Some people like to add some auxiliary materials and cook them directly.
large noodles are named after their bulky shapes, but they have always had various names. Because noodles are cut with a special cutter, it is also called "cut surface"; The thickness is similar to that of chopsticks, also known as "chopstick surface"; Before eating, circle into a ball, also known as "ball noodles"; It is shaped like a cake in a circle, and it is cooked in hot soup when it is eaten, also known as "soup cake noodles"; As a birthday noodle, it is used in Zhu Xi's "washing three denier" banquet, also known as "Zhu Zi noodle". But in any case, Youxi people still like to call it "big noodles."
Noodles with large strips are the daily favorite snacks of Youxi people, especially some office workers, who are too lazy to take care of breakfast and always walk into the snack bar and order a bowl of noodles with large strips.
when a bowl of noodles is served, the wisp of hot air carries a fragrance and comes to the nose. Pick up the noodles with chopsticks, put them in your mouth, and suck them hard. With a "slip", they are warm and full of saliva. Some people will order two or two pieces of pig's head meat again, or a few pieces of dried tofu, or a marinated egg, and eat it with more relish.
the big noodles have been circulated for thousands of years. According to some data, Japanese udon noodles originated from Youxi noodles, which were brought back to Japan from China by the Japanese monk Master Kong Hai in the Tang Dynasty. In the data, udon noodles are called "sliced noodles".
Master Kong Hai is from Kagawa, Japan. After he came back from China, he promoted the practice of udon noodles in his hometown. Diners who have eaten Xiangchuan udon noodles and Youxi noodles at the same time said that their practices and tastes are very similar.
According to the records of Kaiyuan Temple in Fuzhou, Master Kong Hai drifted to Xiapu County due to a typhoon at sea, and then lived in Kaiyuan Temple in Fuzhou. Some people analyzed that Master Kong Hai traveled back and forth to Chang 'an, passing through Youxi, and saw the broad approach, so he brought it back to Japan.
Another way of saying this is that there was a waterway from Youxi to Fuzhou in the Tang Dynasty, and the terminal was in Youxizhou, not far from Kaiyuan Temple. The Minjiang River flows through Youxizhou, which is divided into two branches, north and south, and the south branch is called Wulong River. When Master Kong Hai lived in Kaiyuan Temple, he met the workers in Youxi, who cooked noodles, learned how to cook noodles, and took them back to Japan. Because of the language barrier, it is called "Oolong Noodles" in the name of Wulong River next to Youxizhou, and later it is called "Udong Noodles".
Everything happens by coincidence. If Master Kong Hai hadn't met a typhoon at sea, he wouldn't have become attached to Fuzhou, and there would be no connection between "big noodles" and "udon noodles". More coincidentally, the pronunciation of "Youxi" is very similar to the pronunciation of "delicious" in Japanese. Is this really just a coincidence? After all, the noodles are really delicious!
