Quzhou Duck Head Recipe

Ingredients: duck head (about 3 pounds)

1/2 cup soy sauce

1/2 cup rice wine

Sugar 2 Large spoon

A little each of five-spice powder and pepper

An appropriate amount of chili

Sauteing spices:

A few white scallions

A few slices of ginger

1 star anise

2 sticks of thick cinnamon bark

30 wolfberries

1 tablespoon of rock sugar

1 tablespoon sesame oil

Marine sauce: 1 bottle rice wine

1 cup soy sauce

1 cup water

Preparation Process:

(1) Marinate the duck head with marinade for 4 to 5 hours.

(2) Preheat the pot, stir-fry the rock sugar with sesame oil, add other spices and stir-fry until fragrant, add the marinated duck head, and dry-fry until it becomes coloured.

(3) Pour in all the marinade ingredients and marinate over medium heat for 45 to 50 minutes.
