The method of grilled pork strips is as follows:
1. It is best to choose this kind of pork belly with fat and thin layers. It tastes fat but not greasy, and it is particularly fragrant. Cut the pork belly into large pieces, put it in a cold water pot, add ginger slices, blanch the cooking wine and remove it and wash it.
2. Cut into 1cm thick slices for later use, and then stir-fry the sugar color. Pour a little base oil into the pot, add rock sugar and stir-fry to this deep red color, pour boiling water, and add some common ingredients (ginger slices, onion segments, star anise, pepper, cinnamon, fragrant leaves, dried peppers, salt, soy sauce).
3. Add the sliced meat, cook until it is medium-cooked (chopsticks can be inserted), take out the sliced meat, dry the water on the surface, and keep the soup for later use. Pour the oil from another pan, and after the oil is hot, fry the meat slices with medium and small torches until they are slightly dry, and fry the oil.
4. Finally, put it back into the soup pot and stew for 3 minutes. Soak the cold soup for 2 hours to taste, and heat it when eating.
