Purple Sweet Potato Egg Roll
Ingredients: One piece of purple sweet potato, two eggs, and a dash of sugar.
Method: 1. Boil a pot of water first. When the water is empty, wash the sweet potatoes without peeling them. Cut it directly into long strips, put it in a steamer, put it in a pot and steam it over high heat for 15 minutes after the water boils!
2. After fifteen minutes, turn off the heat and use chopsticks to prick it to see if it is cooked through. If not, simmer it. If it is through, take it out and remove the wallet. 3. Crack two eggs into a bowl, put a spoonful of starch into the bowl, and stir well with a spoonful of water. The purpose of adding starch is to make the eggs more elastic!
4. Heat the electric baking pan, brush with a thin layer of oil, and when the electric baking pan is not very hot, pour the egg liquid into it and spread it evenly, cover it and heat it.
5. After the egg pancakes are spread out, spread the purple sweet potatoes evenly and compact them, the firmer the better. The egg pancake will not fall apart when rolled. After rolling it into an egg roll, just cut it evenly with a knife.
