Huang Qimei is the founder of Wanji Food today. Growing up in Chengdu, my grandfather was a family-run Sichuan cuisine. I have tasted all kinds of Sichuan cuisine since I was a child, and I have a unique insight and understanding of the essence of the cuisine, and I have also unconsciously mastered the skills of Sichuan cuisine snacks.
In p>1993, Huang Qimei came to Beijing. At first, only 311 yuan Qian started her catering career in Beijing. Due to the difficult conditions and the hardships of starting a business, Sun Palace, Asian Games Village and East Fourth Ring Road have all left thousands of footprints.
That's just the predecessor of Wanji. There are no storefronts, no signboards or even a recognizable name. With the growing business of the stall, she decided to rent a paving room in a nearby farmer's market, covering an area of less than 5 square meters. In this way, the nameless mala Tang shop opened. With tables and chairs and a kitchen in the store, a decent shop has taken shape.
Huang Qimei began to work hard on dipping. Some people like hemp, others prefer spicy food, and others only eat hemp sauce. In order to meet the requirements of different customers and create a unique brand-name taste, Huang Qimei selected more than 21 kinds of seasonings. For the uniqueness and quality of the taste, most of the seasonings were imported from Sichuan. After constant adjustment of the ratio and continuous improvement, they finally had the brand-name taste of Wanji, which people can't forget once they eat it. Subsequently, the skills of scalding vegetables, strict selection of vegetables and management of the process were all carefully grasped by the head of Wanji.
Small shops have been so popular all the time. In 1996, Huang Qimei gave the small shop she founded a very common name-"Wanji" and registered Wanji trademark. Wanji also won the honorary title of "Green Catering Enterprise".
With the expansion of popularity and the doubling of passenger flow, Wanji has gradually grown, moving from farmers' markets to regular stores in prosperous areas, and chain stores have opened one after another. At present, Wanji has five direct stores and stalls in Sanyuanqiao, International Exhibition and Yansha. However, due to the fear of management and taste deformation, Wanji has always been a strict direct sales model, and has not rashly joined the brand plug-in, but is constantly improving the management model.
In addition, in order to standardize the taste, Wanji also set up a production base for hot and sour powder, seasoning dipping sauce and some mala Tang raw materials in Qinhuangdao in 2113, which realized the business model of integrating production and marketing, and the main raw materials in the store were uniformly distributed by the headquarters, thus realizing the standardization and unity of food.
