Hometown delicacies made during the Chinese New Year

I fried some delicious food during the Chinese New Year this year.

There are many ways to search for croquettes on Baidu. I chose a method using daikon, carrots and pork fillings.

I went to the market to buy vegetables, and I was confused again when I saw the many vegetables. I casually asked the shopkeeper if I could have these three kinds of croquettes.

The beauty shopkeeper looked at me with a pair of big, watery eyes and said: No! What do you think, the white radish is already fried, but the meat is not yet cooked. You can only have: either pure meatballs or vegan meatballs.

Oh my god, is this the case? What she said makes sense. I thought about it and felt that carrots were strong and resistant to cooking and should also be resistant to frying, so I finally decided to get carrot and pork croquettes.

I once heard someone say that onions cannot be added to croquettes, otherwise they will burn. But many recipes online include onions. However, I didn’t add the onions.

I synthesized various opinions and practices, and made my own simple judgment, and finally determined my own method.

The process of preparing the meatball filling went smoothly.

My friend helped me fry the meatballs. She scooped out a spoonful of filling with a small spoon in one hand, brought it to the other hand, squeezed it out between her index finger and thumb, and a smooth, round ball slid into the oil pan. It's neat and tidy, much like craftsmanship.

The only problem is that neither of us knows how fried it is.

I think it is done when fried until golden or dark brown. But a friend said that the fire was too high and it would turn yellow quickly when put down, but the inside might not be cooked yet.

We turned down the heat.

After frying for a long time, I feel that the meatballs have not changed color yet. I don't know what it means to be mature.

The two of us said, let’s taste it and see if it’s done.

I tried one, but it didn’t taste raw.

How silly! Probably too inexperienced with croquettes.

After they exploded for a long time, I decided to fish them out.

I think, anyway, you have to put it in the pot to heat it when you eat it. Even if it is not fried now, it will be cooked in the pot in the future. So, it doesn’t matter whether you are familiar with it now or not.

The fried meatballs are smooth, dark yellow in color, delicious, beautiful and attractive. Just waiting for the Chinese New Year to eat.

When I was a kid, crispy pork was a delicacy only made and eaten during the Chinese New Year in my hometown.

The way to eat it is to cut the fried crispy meat into slices, put it in a bowl, then add some chopped green onion, shredded ginger, salt, soy sauce, vinegar and other seasonings, and add it to the bowl. Pour the meat into the water and steam it in a pot.

It tastes delicious and was one of my favorite New Year delicacies when I was a kid.

I have made it before, but the taste was never as good as the one I had at home when I was a kid.

This time I didn’t know whether it was raw or cooked.

However, just like the meatballs, consider steaming them before eating. Even if they are not fried now, they will be steamed when you eat them in the future. So, still look at the color, fry it until it turns yellow.

The night after it was fried, I steamed a bowl according to the way I remembered eating it, but I don’t know if the process was not perfect, and the taste was still not as good as when I was a child.

Probably, the taste of childhood is just a feeling and memory that can only be recalled.

However, looking at these fried foods, I feel very fulfilled during the New Year.

Ma Tuoer is a special delicacy in my hometown. It is a kind of fried pasta.

I don’t know what the two characters “Ma Tuo” are. I just wrote the name based on the dialect of my hometown.

There are also other names on the Internet, such as Ma Tuoer, Matuoer, Matuoer, Matuoer... These names are all transliterations, and they are not entirely correct.

Nowadays, Pinyin only has four tones, and the dialect in my hometown has many sounds other than the four tones. The pronunciation of Ma Tuoer is all in the four tones. So I can only write it this way.

When I was a child, Ma Tuoer was a delicacy made and eaten only during the Chinese New Year in my hometown. It is made of yeast dough, sugar, oil, etc., into a special shape and fried in a pan.

Take a bite, it is sweet and soft, it is the taste of happiness and satisfaction in the first month.

But the shape of our hemp nurse is a bit embarrassing, because it looks like a female vulva.

It’s okay if no one realizes it, but if someone realizes it and says it to their face, it would be a bit embarrassing or funny.

Some people put it more implicitly, saying that our hemp babies are female.

Some people make a joke and call the twists male or male.

Others asked, is this the spirit or totem worship of your hometown?

Haha, maybe, I have not verified it.

Based on its shape, it might be more appropriate to call it "Ma Tuo'er" or "Ma Tuo'er". In short, it has to be the word "Ma".

Laozi said in "Tao Te Ching": The gate of Xuan Ni is the root of heaven and earth.

——The subtle door of motherhood is the root of heaven and earth. It can give birth to all things and is the source of the sustainable development and endless life of the universe.

Perhaps we, the Hongdong people, have come from ancient times and inherited the cosmology of our ancestors.

We also understand the relationship between the female reproductive organ and human reproduction, so we highly respect it and give it a very high significance. Therefore, the New Year delicacy that has been passed down to this day - Ma Tuoer.

Or maybe it has no meaning and is designed like this just for the needs of production technology and pure aesthetic concepts.

In short, it is delicious, a delicacy passed down from our ancestors, and there is indeed some intriguing culture in it.

The process of making these delicacies has a feeling of focusing on art. It’s also very immersive in the moment. Enjoyment, fulfillment, joy. After finishing it, I feel a sense of accomplishment.

For the Chinese New Year, you have to prepare something that is different from usual. Only then can you feel like celebrating the New Year, like celebrating the New Year.
