Hangzhou is a city with thousands of years of history and culture, as well as a city of gourmet food.
Hangzhou cuisine, also known as Hangbang cuisine, is the representative of Zhejiang cuisine and is famous for its light, fresh, refreshing, and beautiful color.
Hangzhou's specialty delicacies include: West Lake vinegar fish, Longjing shrimp, Pian'erchuan, Dingsheng cake, cypress wrapped with green onions, cat's ears, Dongpo meat, lotus root starch, sugared osmanthus and so on.
These delicacies not only make Hangzhou people proud, but also attract countless Chinese and foreign tourists to taste them.
However, with the changes of the times and the diversification of people's tastes, Hangzhou's cuisine is also facing some challenges.
On the one hand, although traditional Hangzhou cuisine is exquisite and delicious, it is also somewhat monotonous and lacks innovation and change.
On the other hand, with the influx of foreign food and the development of online platforms, Hangzhou's food is also facing fierce competition and impact.
Some people even say that Hangzhou has become a "food desert" with nothing new and special to attract people's attention.
In order to get rid of this predicament, the Hangzhou Municipal Government recently launched a bold move: offering a reward of 1 million yuan to solicit ideas from the public to introduce new Hangzhou delicacies.
This event aims to stimulate the creativity and enthusiasm of Hangzhou people and create more food brands with local characteristics and contemporary flavor.
At the same time, we also hope that through this event, we can enhance the image and influence of Hangzhou’s food and let more people know and love Hangzhou’s food culture.
So, what new Hangzhou food do you think Hangzhou can introduce?
I am here to share with you some of my thoughts and suggestions: 1. Desserts that incorporate West Lake Longjing tea.
West Lake Longjing tea is one of the top ten famous teas in China and one of the business cards of Hangzhou.
It is famous for its high aroma, mellow taste, beautiful shape and green color.
I think we can use the characteristics of Longjing tea to make some desserts that combine tea aroma and sweetness, such as Longjing tea ice cream, Longjing tea pudding, Longjing tea cake, etc.
This can not only retain the original flavor of Longjing tea, but also increase the level and interest of desserts.
2. Innovate the cooking method and combination of Dongpo Pork.
Dongpo Pork is a traditional Hangzhou dish named after Su Dongpo. It is famous for being fat but not greasy, crispy but not loose, and rosy and translucent.
It is usually made by cutting pork belly into cubes, boiling it in boiling water to remove the blood, and then simmering it with soy sauce, cooking wine, rock sugar, ginger, green onion and other condiments. Finally, it is put into an earthen pot and simmered over a slow fire until the flavor develops.
I think some new elements can be added to the cooking of Dongpo Pork, such as using different meats or parts, or using different seasonings and condiments, or using different cooking methods to create different textures and flavors.
.
At the same time, you can also make some changes in the combination of Dongpo Pork, such as using different staple foods or vegetables, or using different sauces or vinegars to increase the nutrition and sweet-sour balance of Dongpo Pork.
3. Food that combines Hangzhou’s history and culture.
Hangzhou is a city with thousands of years of history and culture. It is also the hometown and source of inspiration for many literati.
I think we can design some food related to Hangzhou’s history and culture, such as dishes themed after celebrities such as Bai Juyi, Lu You, Lin Yutang, or inspired by scenic spots such as the Ten Scenes of the West Lake, Qiantang River Tide, and Lingyin Temple.
Dishes, or dishes based on classic novels such as "A Dream of Red Mansions", "Journey to the West", and "Water Margin".
This can not only show the charm and heritage of Hangzhou, but also increase the storytelling and interest of the food.
The above are some of my thoughts and suggestions on new Hangzhou food. I hope it can bring you some inspiration.
Of course, these are just my personal opinions and may have shortcomings. Everyone is welcome to put forward their own opinions and suggestions.
