Douban Winter Melon 1. First prepare a piece of winter melon, remove the skin and pulp, slice the winter melon and put it on a plate for later use, cut each half of the green and red peppers into diamond-shaped slices, 3 garlic cloves, break them up and cut into minced garlic, and 1 piece of ginger.
Break into small pieces and cut into minced ginger. Put 3 grams of dried chili pepper together for later use.
2. After all the ingredients are prepared, we start cooking. Boil water in a pot. After the water boils, pour in the winter melon and green and red peppers. Blanch them for about 1 minute and drain them out.
3. Heat oil in a pot until it is 50% hot, add minced ginger, garlic, and dried chili peppers and stir-fry until fragrant, then add 5 grams of bean paste and stir-fry quickly to get red oil.
4. Pour the blanched winter melon into the pot and stir-fry quickly, then we start seasoning, add 2 grams of salt, 1 gram of chicken essence, 1 gram of pepper, pour in 5 grams of chili oil to brighten the color, if you don’t like spicy food
