Cooking steps:
1, purple potato and sweet potato, wash them separately, then scrape off the hard skin with a peeler, wash them again, put them on the chopping board and slice them with a kitchen knife. After slicing almost 2 cm, both sweet potato and purple potato are cut out.
2. Take some water from the steamer, return to the stove, turn the water on high, put a grate, put purple potato chips and sweet potato chips on the grate, cover the lid, steam for half an hour, take it out, put it directly into a larger bowl and press it with a spoon.
3. Press purple potato and sweet potato hard and constantly, press them into paste, mix them together, stir them a little, stir all the big particles well, take a washbasin, pour some cassava starch into the basin, then put the pressed mashed potatoes into the washbasin, stir them with chopsticks, stir them into many small flour particles, and then pour some boiling water from a corner to make the starch and mashed potatoes sticky.
4. Knead the pasty noodles and the remaining starch into purple dough. When noodles are completely non-sticky, the surface looks smooth. Find a plate, put the noodles in it, cover it, put it aside and wake up a little.
After waking up, take out the noodles, rub them with your hands, and then knead them into a long strip almost as thin as our fingers. Then take the cutting board and cut the strip into small pieces, which are about the same size. Sprinkle some dry noodles a little, don't stick together.
6. Take a basin, pour some tapioca powder, pour the cut short pieces into the noodles, and stick each face on it, so that it won't stick, so it will become taro. Stick all the tapioca powder, and don't take it out.
7. Take a sieve, sift out the taro and leave the starch. If you cook too much, you can only cook part of it, and put the rest in a fresh-keeping bag. Take it out and eat it later. Take some water from the soup pot, boil the water, pour in the taro and cook until the taro floats. Take it out, put it in cold water, or put it in the refrigerator for ice. It is delicious.
