How to make Jiaxing meat rice dumplings
1. Wash 20 salted duck eggs and crack them all. Collect the egg whites in a large container for another use. Take out the salted egg yolks and cut them in half.
2. Cut 1 kilogram of pork belly into pieces, add 3 teaspoons of light soy sauce, a little salt, 1/2 teaspoon of sugar, 1/2 teaspoon of chicken essence, 2 teaspoons of cooking wine, 1 teaspoon of peanut oil, and 1 teaspoon of black sesame seeds. Marinate evenly for 3-4 hours and set aside.
3. Steam a large piece of Jinhua ham, remove the bones, cut the ham into cubes, add 50 grams of rock sugar and steam in a steamer for 20 minutes. Take out to cool and set aside.
4. Cut raw chestnuts into slices, boil them in a pot of boiling water for 15 minutes, take them out and soak them in cold water, peel off the shell and set aside.
5. Dried rice dumpling leaves need to be soaked in water one night in advance.
6. Soak 5 kilograms of glutinous rice in clean water for half a day, pour out the rice water, and drain the water. Put the glutinous rice into a large container, add 2-3 teaspoons of edible soda ash, 1 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of chicken essence, and 2 teaspoons of peanut oil and mix well.
7. Start making rice dumplings. First, take two rice dumpling leaves and stack them staggered, then bend them to make a bucket shape.
8. Scoop in half of the glutinous rice and add a piece of salted duck egg yolk, a piece of pork belly or ham, or a piece of chestnut. Can be freely matched. 9. Spoon some glutinous rice on top until it is eighty-nine percent full.
10. Fold the zongzi leaves over and cover them on top of the glutinous rice.
11. Fold the corners down, wrap the glutinous rice, and then fold it in one direction.
12. Finally, fold the tip of the zongzi leaf and hold it firmly with your left hand.

14. Put the wrapped rice dumplings into a large pressure cooker.
15. Pour in boiling water, the boiling water should cover the rice dumplings.
16. Cover the lid and air valve of the pressure cooker, turn on high heat and cook until the air valve comes out of the air. Count from the time when the air valve makes a "chi chi chi" sound, keep the air open for 15 minutes, then turn to low heat for 3-4 minutes. Turn off the heat and simmer for 10-20 minutes until the air valve is raised and there is no air left, then open the lid.
