Lu 'an is located in the west edge of Anhui, between Jianghuai and Jianghuai, and does not belong to the category of Anhui cuisine. Its cuisine style is different from that of the Central Plains, and it is not a light Huaiyang cuisine, and it is not greatly influenced by hubei cuisine. Lu 'an people prefer spicy and salty tastes and pay attention to scalding their mouths, because the natural ingredients in mountainous areas are wild. In short, Lu 'an cuisine is rich and varied, and has its own standards, but it has not formed a Lu 'an cuisine system represented by a certain kind of famous dishes. The so-called authentic Lu 'an flavor can be collectively called Dabie Mountain local cuisine. Before talking about Lu 'an, let's start with something that Anhui people have eaten:

Don't always mention wormwood Baba, which stinks. Select the most unique local food in Lu 'an, and keep updating it. Let's talk about it earlier. You are welcome to add it. 1. The names of snacks in Lu 'an are very simple and rude, and they are called wine-fermented Yuanxiao elsewhere. We call them sweet wine dumplings, and the picture is not red bean paste, but red bean porridge. Generally, in summer, when you eat at home, cook a pot to cool it, and then add a spoonful of white sugar to stir and drink it. If you add two fans, jiaozi with leek stuffing or spring rolls, it will be one of the most classic breakfasts in Lu 'an, and the grandmothers will have a side dish if they want to drink rice the most.
2. Fried steamed buns can be said to be one of the characteristics of Lu 'an. Although it looks ugly, the steamed buns fresh out of the steamer are very delicious, especially the ones with broken skins and meat inside, and then fried in an oil pan, the taste is better. I have never seen fried steamed buns anywhere else.
3. For the most common breakfast, stir-fry the leftover pickles and pork with leftovers last night, and add an egg to the deluxe version. I don't know if pickled cowpea and shredded radish are delicious!
4. People in Lu 'an like to eat noodles in the morning. There are three giants of noodles in Lu 'an: chicken soup noodles, tripe noodles and pork head noodles. In the urban area of Lu 'an, there are mainly coarse, biting tide noodles and handmade noodles by hand. Besides the ready-made side dishes cooked in a large reinforced pot, there are also kinds of toppings such as fried pork liver and shredded pork. Chicken soup vermicelli is also a very good choice!
5. Subu specialty, some are called Fried Bao and some are called Crystal Bao. Anyway, Lu 'an dialect sounds the same. The big flat pot is now kang, the shell is golden and crisp as paper, and the stuffing is full and rich. For Lu 'an, all pasta stuffing is nothing more than vermicelli+leek+pepper noodles, and if you make it at home, you will also put some lard residue and eggs.
6. There is fried rice in chicken soup in Chizhou, Anqing. I have eaten it several times, but I feel that the crispy rice in Lu 'an is delicious. The main crispy rice is whole, not scattered, and it tastes cool. The crispy rice in Huoshan's farmhouse stove is very famous. Put hot chicken soup in a bowl and put a few leaves of Chinese cabbage, which is warm and intimate.
7. Plum blossom cakes should be from the south of the Yangtze River, and they are sold in Nanjing and Suzhou, but they are filled with bean paste and colorful things such as dumplings and raisins are stuck on them, making them look like cutting cakes in Xinjiang. Although the plum cake in Lu 'an doesn't look good, it has salty minced pork noodles and spicy tofu stuffing.
8. It is also called Hu spicy soup, which is somewhat different from that in Henan and Shaanxi. Lu 'an Hu spicy soup is too small and fresh, that is, a thousand pieces of silk+kelp silk. The clear soup is light but delicious.
9. Lu' an has its own chain brand, but the cauldron in the picture is cooked and the way of eating scallion cakes is more inclined to Shouxian. Personally, I prefer that casserole vermicelli soup, and have some fried dumpling jiaozi or steamed buns. Don't live too fast.

Let's talk about the food breakfasts in other counties of Lu 'an. Thanks to a Dabie Mountain, Shucheng of Mount Huoshan in Jinzhai makes Lu 'an look much more delicate. The breakfasts in these three places also have their own unique features: for example, Jinzhai's food style has begun to favor Hubei, Mount Huoshan is like Anqing, and Shucheng is like Hefei.
1. Jinzhai sesame seed cake is a fairly regular circle, similar to the "Guo Kui" in Wuhan and Chengdu. Stick it on the fireplace and cut it open with a knife after baking. Add qianzi, green pepper, ham tenderloin, and pour some brine soup, which is salty, fragrant and tender. There is also a kind of dried plum seed cake in Meishan. It is estimated that it has its own innovation after learning from southern Anhui, but it is as big as five Huangshan seed cakes. It is spicy and delicious!
