6. Bring the fire to a boil and keep it boiling for half an hour. When I cooked it, I didn't cover it, because the pig's trotters have been blanched, so the water is clean now, but there will still be a small amount of floating foam. Scoop it up with a spoon.
7. After half an hour, turn down the fire, add the soaked and washed kidney beans, add a few peppers, a piece of crushed ginger and a small amount of cooking wine, and simmer until the trotters are soft and rotten, about 2.5 to 3 hours, and try the softness of the meat yourself.
