How to make Shooutao
1 Preparation of yeast dough: Soak fresh yeast in warm water for 5 minutes and mix well.
2 Add yeast water to the flour and stir, then add an appropriate amount of warm water, knead evenly, cover and let rise until 2 times the original volume.
3 Take 1/8 of the dough, add matcha powder and knead until it becomes a green dough, leaving it as peach leaves.
4 Making red bean paste balls: Wash the red beans and seedless dates, put them into a pressure cooker, add 3 times the water of the red beans and bring to a boil over high heat, cover and simmer for 30 minutes.
5 When there is no air in the pressure cooker, open the lid, add sugar and osmanthus sugar, crush the red beans and red dates with a shovel, and then make bean paste balls one by one.
6 Shoudao production: Knead the risen dough until there are no air bubbles in the dough, divide it into small portions, use a rolling pin to roll each portion into a skin, and place it on the tiger's mouth of your left hand to form a nest shape. Wrap in bean paste balls.
7 Roll it into a round shape and make a sharp point on the upper part. Use the back of a table knife to press out the peach pattern on the side. Do the rest in sequence.
8 Preparation of peach leaves: Knead the green dough and divide it into small pieces, and use your hands to shape it into a jujube stone shape with both ends pointed.
9 Flatten the date pit-shaped dough and roll it into leaf-shaped sheets, and carve out the veins of the leaves with a table knife.
10 Assembling the longevity peach: Apply a little water on the non-textured side of the peach leaves, and stick them to the longevity peach one by one from bottom to top.
11. Cover the prepared raw peach peach with a damp cloth and let it rest for 20 minutes.
12 Shouting peach decoration: Shouting peach looks good if it has some pink color. Dissolve the taro powder with a little water into a thin paste, use a brush to brush the white dough parts of Shoudao one by one, and put it into a cold water steamer.
13 Steaming of Shoudao: Place the steamer with Shoudao on the stove, bring to a boil over high heat, then turn to low heat and steam for 15 minutes.

It happened to be my father’s birthday. My father likes sweets, so I made some longevity peaches to celebrate. I wish my dear father good health and long life! The recipe comes from CCTV's "Everyday Diet" program, and the ingredients used are slightly different.
Tips
When steaming Shoudao, the fire should not be too high, otherwise the finished product will not be full.
