Shepherd's purse jiaozi
Ingredients: 500g flour, 280g water, shepherd's purse, minced meat, chopped green onion, soy sauce, pepper powder, eggs, salt, oyster sauce, oil and sesame oil.
Practice steps:
Step 1: Put the flour into the basin, slowly add water, stir while pouring, stir into flour floc, then start to mix the flour and wake for 30 minutes.
Step 2: Chop the pork into minced meat, add chopped green onion, pour proper amount of soy sauce and pepper powder, stir uniformly in one direction, and marinate for 10 minute; After washing shepherd's purse, put it in water and blanch it. Put boiling water in the pot and blanch it until it turns green, then take it out, rinse it with cold water, wring out the water and chop it up.
Step 3: put shepherd's purse into the meat stuffing, knock in an egg, add some oil, salt, oyster sauce and sesame oil, and stir well in one direction.
Step 4: After waking up, knead the dough evenly, knead it into long strips, cut it into small doses with uniform size, knead it round and flatten it to form a dough sheet with thick middle and thin edges, wrap it in a proper amount of stuffing, pinch it tightly and wrap it all for later use.
Step 5: Boil a proper amount of water in the pot, add some salt to the water and pour it into the jiaozi. After boiling, order cold water, order cold water three times, and cook in jiaozi.
Because shepherd's purse is dry, it is not easy to get water when making dumpling stuffing. We can add an egg to the stuffing, so that the stuffing will become tender and juicy, otherwise jiaozi will taste a little dry.
