1. Ingredients: 600 grams of ribs, 1 potato, 150 grams of vermicelli, 10 dried red peppers, 2 star anise, half a green onion, and 20 grams of ginger.
2. Soak the vermicelli in advance, wash and shred the peppers, wash the star anise, cut the green onion into sections, and smash the ginger.
3. Boil water in a pot, add onions and ginger, pour the ribs in and blanch them.
4. Rinse the blanched pork ribs with cold water to remove any blood foam, then control the water and set aside.
5. Peel the potatoes, cut into pieces and soak in water.
6. Pour twice as much oil into the pot as for cooking and heat it up.
7. Add potatoes and fry until golden brown. Set aside.
8. Put the ribs into the pot and stir-fry.
9. Add chili and star anise and stir-fry together.
10. After the chili is fragrant, add sugar and rock sugar and stir-fry until the ribs are slightly brown.
11. Add garlic chili sauce, dark soy sauce, and light soy sauce and stir-fry until the ribs are colored.
12. Pour in boiling water that covers the ribs, bring to a boil over high heat and then simmer over low heat for 30 minutes.
13. Add the soaked vermicelli and add salt.
14. Add the fried potatoes.
15. Simmer over high heat for 10 minutes, then add chicken essence to reduce the juice.
