Japanese sake is brewed wine, while China liquor is distilled wine, which is also the most fundamental difference between them. The accuracy of sake is about 15 degrees, while the alcohol content of liquor is relatively high, usually the original liquor is about 50 degrees, so China liquor is all spirits.
The main raw material for sake brewing is rice, and the main raw material for China liquor brewing is sorghum. The difference of brewing raw materials makes the two wines have essential differences in taste.
Besides, Japanese sake, like China liquor, can also be divided into different types, namely, Luzhou-flavor, Maotai-flavor and Fen-flavor. Japanese sake also includes sweet wine, spicy wine, strong wine, light wine and high sour wine.
The difference between liquor and shochu
The difference between shochu and liquor is roughly the same, and grain distilled liquor is also transparent and colorless.
Liquor is distilled liquor with grain as the main raw material, Daqu, Xiaoqu, bran koji and distiller's yeast as saccharifying and fermenting agents, which is cooked, saccharified, fermented and distilled. Also known as shochu, the temptation of fate, burning knives and so on. The wine is colorless (or yellowish) transparent, pure in aroma, sweet and clean in mouth and high in alcohol content. After aging, it has a compound aroma with esters as the main body.
