Crispy bacon is made of local pigs, with sweet potato seedlings, crispy vegetables and wild vegetables from Shan Ye, and with mountain spring water from Luofu Mountain. Pork meat is particularly strong and refreshing, and fat and lean meat are very uniform.
Boned and cut into strips. A pig, fed for more than a year, weighs about 100 kg. After winter, it can be slaughtered. Then the pork is cleaned, boned and cut into strips. A piece of pork is cut into two fingers wide and weighs about one kilogram.
Next, cut the pork strips and put them into a large pot, and add more than ten kinds of seasonings such as salt, fennel, star anise, sugar, cooking wine and soy sauce. Proportionally, and constantly stir the pork to make it taste even.
Marinate in a crock 12 hours. After being stirred evenly, the pork is marinated in a traditional crock, and stirred again after 6 hours, so that the pork can absorb the ingredients evenly. /kloc-after 0/2 hours, it can be picked up and dried.
It is recommended to dry when there is wind and sunshine. Pass a rope through the strong end of the pork, build a shelf on the balcony of the building and hang it in rows. The first three days of drying bacon are the most critical, so it is best to choose windy and sunny days. Deep in the mountains, there is a strong mountain wind in Sulao Village, and the average temperature is 3-4℃ lower than that in the urban area. Coupled with the large temperature difference between day and night and good sunshine, dried bacon has its own unique flavor. When there is plenty of north wind, air and sunshine, take it out to dry for about a week.
Finally, dry and store. The first thing the villagers do when they get up every morning is to take the bacon out and hang it on the roof in front of their house, and usually bring it back at night. After air-drying for a week, you can see that the fat part is transparent through the sunlight, indicating that the bacon is air-dried and can be stored. Pickled bacon can generally maintain 40% of the meat weight, that is, pigs 100 kilograms, and dried bacon weighs 45 to 50 kilograms.
