Ingredients: 500g flour, 5g yeast, 235g water, 3g salt.
1. Add yeast to water and mix evenly. Let it sit for 10 minutes. Add flour, salt and yeast water to the basin.
2. Knead into a ball, let it rest for 10 minutes, and then knead into a smooth dough.
3. Roll the dough into long strips and divide it into dough pieces of the same size.
4. Roll the dough into round slices.
5. Divide four into a group and then stack them up.
6. Use chopsticks to press it in the middle.
7. Fold it and press it again.
8. Stand up the noodles.
9. Pinch the bottom with your hands and press down on the top with chopsticks.
10. Do everything in order, put in the steamer, heat the water in the steamer to 40 degrees, turn off the heat, put the steamer on top, and let it rise to 2.5 times the size.
11. After proofing, take down the steamer, boil the water in the pot, put the steamer on top, steam for 15 minutes, turn off the heat, and simmer for two minutes before opening the lid.
