Special old tofu
Ingredients: fresh old tofu, pork tripe, chives, garlic, ginger or fresh ginger, P-county red bean paste, soy sauce, cooking wine, cooking oil and raw flour.
put the old tofu in clean water to remove impurities on the surface. Then cut into even small squares, not too thin or too thick. Pour cooking oil into an empty pot, heat it over medium heat, and then pour tofu slices while the oil is burning until the surface of the pot is just like the pan.
fry the tofu until it is only a little golden yellow, and then take it out for use. Slice garlic and ginger slices. Take about 2 tablespoons of P county bean paste and set it aside. Cut the onion into small pieces, separate the onion from the onion stem, and sprinkle the onion when starting the pot. Onion stems are tender and can be directly sprinkled on tofu after being placed on a plate.
slice the pork belly and put it in a bowl. Pour out the oil used to fry tofu from the pot, leaving only a little oil, and then adjust it to medium heat. When the oil level shifts, pour in sliced garlic and ginger slices to give off fragrance, and then pour in sliced pork belly.
when the pork belly is stir-fried until it is dry, you will smell the meat. When it turns light brown, shovel it to the side of the pot with a spatula, leave the oil blank and pour it into the ix bean paste. Stir-fry the bean paste in oil until it smells fragrant, then stir-fry the pork belly, stir it together and mix it evenly.
immediately pour in sliced tofu, add 1 tbsp soy sauce and 1 tbsp cooking wine, and add a little water. Stir-fry several times, mix the tofu slices and pork belly evenly, and cook for about 1 minute to make the sauce stale.
before pouring out the pot, sprinkle with shallots, and finally slowly pour into the pre-mixed flour water. The amount of ginseng water is adjusted according to the thickness you like. Stir-fry in a pot until it is evenly coated with ginseng juice, then turn off the heat and cook. Sprinkle chopped green onion on the plate.
