The inventor of Zuoji is Peng Changgui. /kloc-One day in Taipei in the 1970s, Jiang Jingguo worked late and took his entourage to Pengyuan Hotel opened by Peng Changgui. The restaurant was originally prepared to close, but all the high-end ingredients were used up that day, leaving only chicken legs to use. Peng Changgui had to improvise. He boned the chicken leg, diced it, seeded it, and cut the pepper into sections. First, he fried the chicken pieces and drained them. Then, he mixed them with pepper, chicken nuggets, soy sauce, vinegar, minced garlic, Jiang Mo and chopped green onion. Finally, he thickened them and drenched them with sesame oil, which became a new dish. After eating, Jiang Jingguo was very delicious. When asked about the name of the dish, Peng Changgui improvised, saying that it was a fried chicken nugget that Zuo, a famous Hunan soldier, loved in the late Qing Dynasty, and borrowed Zuo's name to bless the dish, so this dish was called "Zuo Chicken" and became a specialty of Peng Yuan.
