How to make watermelon rind fudge is as follows:
Tools/materials: 2 cups of watermelon rind (remove rind and pulp), 1 cup of water, 2 cups of granulated sugar, 1/4 cup of lemon juice, 1 packet of powdered gelatin, and powdered sugar (for sprinkling on fudge).
1: Cut the watermelon rind into small pieces, put it into a pot with water, bring it to a boil, then turn down the heat and cook for 15-20 minutes until the rind is soft.
2. Pour the cooked watermelon rind into a blender and blend it into a puree.
3. Pour the pureed watermelon rind into a saucepan, add the sugar and lemon juice and stir well.
4: Add the gelatin powder to a small amount of water and stir to dissolve, then pour into the pan and continue to stir well. Place the pan over medium-low heat and cook, stirring constantly, until the syrup thickens.
5. Pour the syrup into the molds and let it sit for a few hours or overnight to solidify completely. Remove the solidified fudge from the molds and sprinkle with powdered sugar.
