Seasoning: onion 30g, ginger 20g, garlic 20g, bean paste 10g, vegetable oil 10g, sugar 10g, dried tangerine peel 4g, star anise 5g, salt 3g, monosodium glutamate 3g, and 1g, respectively.
Practice of home-cooked sauce for pig's hands;
1. Wash pig's hands (trotters), put them on fire and bake them until the skin turns yellow, and take them out;
2. Soak the pig's hand in hot water for a while, brush the epidermis to yellow and white, and cut it from the middle with a knife;
3. Cut the onion into sections, and slice the ginger and garlic separately for use;
4. Enlarge the fire in the pan, pour in vegetable oil and heat it, add bean paste and stir fry, then add onion, ginger, garlic, aniseed and dried tangerine peel, cook soy sauce and cooking wine, and pour in water (500ml);
5. Put pig's hand, sugar, cooking wine, refined salt and monosodium glutamate into a pot to boil;
6. Cook slowly on low heat until the pig's hands are cooked, remove and cool.
