Three scales have rich meat, delicious meat, rich texture, and fewer fish bones; while grass carp has softer meat, smooth texture, and melts in the mouth, but more fish bones and broken bones.
Sandao Lin is cultured in cement ponds, and the meat has less earthy smell. Grass carp is mostly cultured in fish ponds, and the earthy smell is heavier. So the three scales are delicious.
