Pull the celery stalks outward from the bottom so that the stalks split from the root on their own. Rinse the celery stalks under cold water to remove any soil, followed by excising the white part at the bottom. To peel, place the bottom of the celery against a cutting board and hold the paring knife and peel down the celery stalk lengthwise with a smooth motion and even pressure, repeating this action until the outer skin of the stalk is completely removed. Then cut into chunks, thin slices, square dices, or long strips, depending on the cooking situation.
